The era of show cooking and the star system that revolves around it has apparently run its course. There would now seem to be a new, or rather an old, trend in the kitchen: a return to the primordial simplicity that puts the product and tradition at the heart of everything. The point of reference here is the fifties, the period after the second world war. A surprise statement perhaps by one of the most famous chefs on television: Gianfranco Vissani. He recently admitted he had exaggerated with his media visibility and that for him, at least, it was time to take a step back towards the basics of Italian cuisine. For this reason he has decided to publish a three-volume book entitled "L'altro Vissani", with recipes from yesteryear. Is this a real return to his roots or is contemporary cooking different from both that of half a century ago and that of the recent past? The Gastronaut Davide Paolini will be asking the author himself, in a no-holds-barred interview.
