Borgo Santo Pietro
Borgo Santo Pietro is an organic farm that has doubled in size. The new acquisition includes a 40-hectare farm of luxuriant green meadows along the River Merse, a 300-strong flock of sheep and an artisan cheese factory, paving the way for large-scale cheese production. The sheep produce about 400 litres of milk a day, which is turned into soft, fresh cheeses such as raveggiolo, primo sale and ricotta, plus fresh pecorino, semi-mature and mature cheeses. This new cheese factory strengthens the Borgo Santo Pietro philosophy of “from the earth to the plate”, together with production of yogurt and cheese made from fresh sheep’s milk, served at the hotel buffet and in the Michelin Star restaurant Meo Modo.
