A family’s passion has become a solid business reality, that exports across borders a 70% of its production.
We take care of more than 3 thousand barrels, that accommodate inside the Balsamic Traditional Vinegar of Modena PDO, aged at least 12 or 25 years.
The barrels for aging shall be made of different woods (chestnust, cherry wood, juniper wood, mulberry, durmast and acacia) and placed in a battery by descending order, from the biggest to the smallest one and its particular 100 ml bottle, created by the designer Giorgetto Giugiaro, is famous all over the world and it is the only one permitted by law.
Traditional Balsamic Vinegar of Modena PDO is our flagship product but to this is added a wide collection of products which, like ABTM, derive from excellent quality ingredients: the typical Modenese grapes from the family farm "Tenuta del Cigno", located in the outskirts of Modena.
The grapes of our vineyards are subject to a soft and slow crushing and a cooking with open vase on direct heat.
The result of these first production steps is the must, basis and essence of all the products, with unique organoleptic characteristics, of the Acetaia Malpighi.
