Try this exclusive chocolate and coconut cookies recipe from Laura Annert, alias Mamanchef.

Cookies choco coco
 
Type of dish: afternoon snack
Difficulty ***
Preparation time: 25 minutes
Cooking time: 15 to 20 minutes
 
Ingredients for about fifteen cookies:
100 g all-purpose flour
50 g coconut flour (you can replace it with wheat flour but the recipe will lack coconut taste)
30 g rolled oats
1 sachet of baking powder
5 pinches of salt
120 g soft butter (take out 1 hour before)
50 g coconut sugar
75 g cane sugar
1 egg
5 spoonfuls of milk
100 g of dark, milk or white chocolate chips
 
1.Preheat the oven to 180° C. Line the oven rack or baking tray with parchment paper. In a bowl, mix the wheat and coconut flours, rolled oats, yeast and salt.
 
2. In a second bowl, mix the soft butter, cane and coconut sugars. Whisk until the mixture turns white. Add the whole egg and milk.
 
3. Pour the first mixture into the second one by mixing with a spatula. Finally, add the chocolate chips in the dough.
 
4. Use a spoon to make scoops of the dough and place them well spaced apart on the baking tray. Flatten them with the back of the spoon. Place the baking tray at the bottom of the oven lowered to 160° C for 15 minutes of cooking. Cookies should be crisp on the outside and soft on the inside.
 
Little advice!
In addition to chocolate, you can soak three tablespoons of raisins or dried apricots cut into small pieces in a glass of warm water. Drain them before adding them to the first mixture.
