Company Profile
We born as farmers and producers of Italian Top Quality Dry Pasta, using our durum wheat flour. Pasta DI CANOSSA comes from durum wheat grown exclusively in the Cuniola Estate in San Martino, Ferrara. Year after year, we carefully choose the varieties of durum wheat to be sown in autumn and, with care, we follow their life cycle until the moment of threshing. Once transformed into granule, a particular semi-wholegrain grinding of durum wheat, we produce our bronze-drawn pasta, with careful slow drying, which preserves its flavours and aromas. Drying in the Pastificio proceeds slowly from 14 hours for short pasta up to 20 hours for long pasta, so that it acquires the right consistency and porosity. We give the pasta the right time to release its flavour. The traditional bronze drawing gives it an unmistakable colour and a particular roughness to better absorb the condiments.
